Black bean dip

Ingredients:
8 oz Velveeta cheese
3 cans black beans
1/2 cup salsa

Directions:
Blend it all up in a blender. Scoop into a pot and bring to a boil. Goes great with tacos, burritos, you name it!

Guacamole

Ingredients:
2-3 large avocados
1 Roma tomato, diced into small pieces
1 Tbs cilantro, chopped fine
lime zest of 1 lime
lime juice of 1/2 a lime
1/2 Tbs. onion, minced fine
salt to taste

Directions:
Mash avocado with a fork (can also use egg beaters). Add all ingredients together and mix until even throughout. Note: you only need one lime (zest the outside, then use the juice of half of the lime). Could add garlic powder or other seasonings to your choosing (we like the more pure avocado lime taste). Eat with chips, in a burrito, with a quesadilla or any other way you like.

Tacos

Ingredients:
1 lb hamburger
ranch seasoning
minced garlic
taco seasoning (Taco Bell's chipotle is our favorite)
1 can pinto beans, heated
lettuce, chopped
tomato, chopped
cheese, grated
avocado, cubed
taco shells

Directions:
Cook hamburger with ranch seasoning, minced garlic and taco seasoning. Prepare toppings. Heat taco shells on a cookie sheet in oven until warm. Add toppings. Enjoy.

Taco Salad

Ingredients:
1 pound hamburger
2 Tbs. taco seasoning (we like Taco Bell's chipotle seasoning)
ranch seasoning
lettuce
chips
cheese, grated
tomato, chopped
avocado, diced
cucumber, sliced

Dressing:
1 part salsa to 1 part sour cream, mix

Directions:
Cook hamburger, drain and season. Prepare toppings and dressing. Layer salad, toppings, hamburger, crushed chips and dressing. Enjoy!


Steak Tacos

Steak Tacos

Look for Carne Asada, if not, you can use a round rump roast, cut into small, thin strips. 
If meat is slightly frozen, it is easier to cut into small, thin strips. 

When cooking... 
melt 2-4 Tbs. butter in a frying pan
season with garlic salt and cajan style seasoning - sprinkle generously
season with pepper and onion powder - sprinkle a bit 
Drizzle 2-3 TBS olive oil over top
Stir and season again...
season with garlic salt and cajan style seasoning - sprinkle generously
season with pepper and onion powder - sprinkle a bit 
add a little ranch seasoning
cook until slightly blackened.
