Ingredients:
carrots, chopped
potatoes, sliced thin and chopped
onions, chopped
hamburger meat, seasoned well
cream of chicken soup
Directions:
Get a large piece of tin foil. Spray with non-stick spray. Place veggies down, then hamburger in the middle, seasoned with garlic, onion powder, salt and pepper. Sprinkle around the rest of the chopped vegetables. Scoop cream of chicken soup on top. Fold tin foil over. Use a second sheet of tin foil to double wrap. Place on a cookie sheet and put in oven. Bake at 350 for 45 minutes.

Burrito Crunch Wrap
Ingredients:
1 lb ground beef
1 can black beans, warmed
6 tostada shells
1 cup sour cream
2 cups shredded lettuce
1 diced tomato
1 cup shredded cheese
nacho cheese sauce
Directions:
Cook and crumble the ground beef (season with salt, pepper, onion powder, garlic, etc.), drain
grease.
Warm up the nacho cheese sauce in the microwave and set
aside.
Place a flour tortilla on a plate and warm in the
microwave for about 20 seconds.
Lay one tortilla on a flat surface. Spread a couple of
tablespoons of nacho cheese in the middle of the tortilla.
Place some meat and beans on top of the nacho
cheese.
Next, add the tostada shell, a thin layer of sour cream,
lettuce, tomato and shredded cheese
To fold into the actual crunchwrap, start with the bottom
of the tortilla and fold the edge up to the center of the fillings. Keep doing
that, folding as tight as possible, as you work your way around the tortilla.
You will probably need to wrip off a piece of another tortilla for the center
so that tortilla is covering all of the insides.
Spray a skillet or cooking pan with cooking spray and
heat over medium heat. Place the crunch wrap seam-side down, onto the skillet.
Cook for 2-3 min., or until golden brown.
Flip over and cook the other side for another 2-3 min or
until golden brown.
Cook the rest of your crunch wraps and eat immediately.

Sam's Stroganoff
1 pound hamburger
1/2 cup diced onions
2 Tbs. Worcestershire sauce
1 Tbs. ketchup
1/4 cup sour cream
1 can cream of mushroom soup
1 tsp. salt
1/2 tsp. pepper
1 cup milk
3 cups rice, precooked
green beans
Directions:
Cook hamburger with onion. Season with ranch seasoning if desired. Once hamburger is cooked, add rest of ingredients (Worcestershire sauce, ketchup, sour cream, cream of mushroom soup, salt and pepper). Stir in precooked rice and green beans.
Serve with a side of butternut squash.

Glazed Mini Meatloaves
- 17-20 ritz crackers (could also use saltines), crushed fine (about 2/3 cup)
- 1/4 cup milk
- 1/3 cup minced fresh parsley
- 3 tablespoons Worcestershire sauce
- 1 egg
- 1 1/2 Tbs. Dijon mustard
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 pounds ground meat
- 2 teaspoons oil
- 1/2 cup ketchup
- 1/4 cup packed light brown sugar
- 4 teaspoons cider vinegar

Glaze:
- Preheat oven to 425 degrees. Stir cracker crumbs, milk, parsley, Worcestershire sauce, egg, mustard, onion powder, garlic powder, salt, and pepper together in a large bowl. Add ground meat and combine until uniform. Shape mixture into oval loaves- should make about five.
- Heat oil in 12-inch nonstick skillet over medium heat until the oil is rippling. Add meatloaves (without letting them touch sides) and brown well on one side, 3-5 minutes. Carefully flip loaves over and brown on the other side for another 2-3 minutes.
- Meanwhile, mix glaze ingredients together until smooth. Transfer mini meatloaves to a foil-lined baking pan and spoon the glaze over the top of each meatloaf. Bake for 18-20 minutes (if needed cut one open to test to see if done).
Serving idea: serve with a baked potato & salad

Stuffed Shells
Cook up hamburger (seasoned) add spaghetti sauce and pour over stuffed shells (found in frozen section at store). Follow package directions. Serve with green beans and french bread.

avocado, cubed
taco shells

Spaghetti
Ingredients:
Spaghetti noodles
1 pound hamburger or sausage
spaghetti sauce (26 oz jar--our favorite is Great Value Brand)
1/4 cup ketchup
Boil noodles. Meanwhile, season and brown hamburger or sausage in frying pan. Drain fat. Once cooked, add spaghetti sauce and ketchup. Serve over noodles and top with parmesan cheese. Goes great with bread, green beans or salad.

Soften 1 lb hamburger (use lower fat if possible)
Mix beef with 2 eggs
1 cup dried bread crumbs
½ cup milk
2 tsp. salt
1 tsp. pepper

Water (just enough to make it stick together)

Directions
Put stuffing in between two fairly thin hamburger patties
and pinch edges closed. Place in a 9x13 and drizzle sauce on top. Makes about
4-5. Bake at 350 for 45 minutes.
Goes well with with mashed potatoes, lipton onion, or ranch potatoes
Enchilada Casserole
Ingredients:
Hamburger
Sm sour cream
2 cans cr. of chicken
1 sm can green chili ench. sauce
1-2 cups salsa
1 sm package frozen corn
Tortillas
Cheese
Directions:
Brown hamburger seasoned with salt, pepper garlic, and
onion powder. Meanwhile, mix sour cream, green chili sauce, salsa and corn. Add
browned hamburger to sour cream mix.
Layer 9x13 alternating with hamburger mix and tortillas.
Top with grated cheese.
Bake at 350 for 30 min.

Homemade Chili
Ingredients:
½ pound hamburger
½ onion or 3 green onions
Garlic (granulated)
Ranch Seasoning
Ranch Seasoning

Pepper
1 can sliced stewed tomatoes (cut into bite size pieces)
2 cans white beans (S&W lightly seasoned)
1 can pinto beans
1 can tomato sauce (8oz)
¼ cup ketchup
1 cube chicken bouillon
1 tsp basil
1/4 tsp oregano
Directions:
Brown hamburger with onion (cut into small pieces) and seasonings: taco seasoning, garlic, ranch, salt and pepper.
In a separate pot add the browned hamburger and onion and
everything else (stewed tomatoes—cut into bite size pieces, beans, tomato
sauce, ketchup, water, chicken bouillon, basil, and oregano). Simmer covered until ready to eat.
Can also brown hamburger and then put everything in a
crock-pot and let simmer for 4 hours.
Serves 6-8.

Top with sour cream, cheese and Frito corn chips. Add some cornbread to the side.
