Ingredients:
1 cup blueberries (frozen)
2 Tbs ground flax seed
1 apple, cored
2-3 scoops protein powder (we like plant based chocolate from Costco)
2-3 large leafs kale
spinach, fill to the top of blender
3-4 cups water
Directions:
Place all ingredients in vita-mix, blend until smooth. Serve fresh or store in the fridge up to one day. Alternatives: add greek yogurt, use juice instead of water, and/or omit apple

Creamy Sesame Dressing
5 Tbs. toasted sesame seeds
1 Tbs. white vinegar
1 Tbs. sesame oil
2 Tbs. vegetable oil
3 Tbs. mayonnaise
3 Tbs. Heavy cream (or milk for a lighter version)
2 Tbs. soy sauce
4 Tbs. sugar
Directions:
Blend all ingredients in vitamix until smooth (may have a few small sesame seed lumps). Serve over salad.

Sun-Dried Tomato Hummus
Ingredients:
2 cans garbanzo beans (drained)
1/3 cup olive oil
1 tsp. ranch powder
1 tsp. sesame oil
1 tsp. minced garlic
1 tsp. sun-dried tomatoes
1 Tbs. lemon juice
Directions:
Place all ingredients in vita-mix and blend until desired consistency.

cauliflower gratin
2 Tbs butter
2-3 chopped green onions
1 head cauliflower, chopped into florets
1 cup chicken broth
3/4 cup milk (or cream)
1 tsp. Dijon mustard
1 tsp. lemon juice
1 Tbs. flour
Italian bread crumbs
Directions:
Preheat oven to 375 degrees. In a large sauce pan melt butter and saute green onions over medium high heat for 4 minutes. Add cauliflower, season with salt and pepper, and then add broth. Cover and cook until cauliflower is tender, 10 minutes.
Transfer cauliflower to a 9x13 baking dish. Place remaining liquid and green onions into Vitamix along with milk, dijon mustard, lemon juice and flour. Slowly increase to variable 10 and blend for 40 seconds.
Pour sauce over cauliflower. Sprinkle Italian bread crumbs over top.
Bake for 25 minutes.

Roasted Pepper Sauce
Ingredients:
1 can diced tomatoes
2 cups milk
2 bell peppers (not green)
1/4 onion
2 jalapenos (no seeds)
3 tsp. chicken bouillon
1 Tbs. minced garlic
1 tsp. pepper
1 tsp basil
1/2 cup Parmesan, grated (powdered is ok)
1/2 cup cheddar cheese, grated
2 Tbs cornstarch
Directions:
Cut peppers, onion and jalapenos into large pieces, brush
with olive oil. Grill peppers, onion and
jalapenos on the BBQ (could try baking in oven?)
Place all ingredients in blender and blend for two minutes.
Pour into pot and heat on stove until thickened (do not let boil).
Serve over noodles.

Frozen Hot Chocolate Vitamix
Ingredients:
4 packets hot chocolate
2 1/2 cups of milk
1/2 cup heavy whipping cream**
4 cups ice cubes
flavoring* (1/4 cup Torani salted caramel syrup was yummy)
Directions:
Put all ingredients in your blender. Enjoy
Serves 4
*Other flavor ideas: candy canes, peanut butter, banana, raspberries
**could sub whipping cream for milk (just wouldn't be as creamy)
