Sheet Pan Fajitas


Seasonings
2 tsp. chili powder
½ tsp. cumin
1 tsp. paprika
½ tsp. coriander
1 tsp. garlic powder
3 tsp. salt
1 tsp. pepper

Fajita Filling
1 ½ lbs chicken, cut into chunks
3 bell peppers, sliced into ½ inch strips then cut in half
1 medium onion, chopped into semi large slices
3 Tbs. olive oil

For Serving
Tortillas
Lime juice
Cilantro, chopped
Sour cream
Avocado
Diced tomatoes
Mexican Cheese
Black Beans
Hot Sauce

Directions:
1.       Preheat oven to 400 °
2.       Mix seasonings in a small bowl
3.       Chop peppers, onion and chicken
4.       In a large bowl mix peppers, onion, chicken, oil and seasonings. Toss to coat.
5.       Spread on a foil lined baking sheet
6.       Bake for 18-25 min. until veggies are tender and chicken is cooked through.
7.       Serve fajita fillings in a warmed tortilla with desired toppings

Sausage and Pepper One Pan Pasta Skillet

Ingredients:
1 Tablespoon extra virgin olive oil
1 (13 oz) Kielbasa, sliced on a diagonal into coins (or sausage)
1 red bell pepper, diced
1/2 onion, diced
1 Tbs. minced garlic
1 cup halved grape or cherry tomatoes
2 cups chicken broth
1 cup milk
½ pound pasta
⅛ teaspoon cayenne pepper (optional)
1 teaspoon freshly ground black pepper
4 ounces Parmesan cheese, grated

Directions:
Heat a large skillet over high heat. Once hot, add the olive oil and swirl to coat the pan.
Add the kielbasa (if using sausage no need for oil), red pepper, and onion and saute until browned. Add garlic and tomatoes and sauté 30 seconds.
Add the chicken broth, milk, pasta, cayenne pepper (if using), and black pepper. Stir well and bring to a boil.
Cover, reduce to low, and simmer 12-15 minutes or until pasta is al dente. Remove cover and turn off heat.

Stir in the grated Parmesan cheese and serve hot.

**yummy variation: use sausage and zucchini, add some cornstarch to thicken

Hawaiian Haystacks



Ingredients:
rice
chicken
1 can cream of chicken soup
1 cup milk

Toppings could include:
cheese, grated
green onions
bell peppers
avocado
boiled eggs
celery
tomatoes
pineapple
mandarin oranges
Chinese noodles

Directions:
Cut chicken into cubes, season and cook in frying pan with a little water. While chicken is cooking, pour cream of chicken soup and milk into a pot and heat (stir frequently so it doesn't burn to bottom). Add chicken to soup mixture. Pour over cooked rice. Add on desired toppings.

Philly Cheese Steak Sandwiches


Ingredients:
beef (not hamburger)
bell pepper
onion
1 Tbs. oil
1 tsp. salt
¼ tsp. pepper
1 tsp. garlic, minced
mozzarella cheese, grated
hoagie rolls

Directions:
Cut beef, bell pepper and onion into strips and fry in oil. Season with salt, pepper and garlic. Once meat is cooked, top with grated cheese and cook until melted. Serve on toasted hoagie rolls.
