Carnivore Breakfast Casserole

Ingredients:

12 oz breakfast sausage*
12 eggs
2 cups cheddar cheese, shredded
3/4 cup heavy whipping cream
1 TBS red hot sauce
2 green onions, chopped
1/4 tsp. pepper
1/8 tsp. salt**


*alternate meat includes ham, ground beef, turkey, bacon
**may need to add more salt /season meat if using ground beef or turkey

Directions:
  • Preheat oven to 350 degrees 
  • Cook meat thoroughly (season if using non-salty meat) and break into pieces
  • Spread cooked meat in bottom of 9x13 baking dish
  • In a large bowl, whisk eggs, cheese, whipping cream, hot sauce, green onions, salt and pepper
  • Pour egg mixture over cooked meat in baking dish
  • Bake 35-40 minutes

Sausage and Pepper One Pan Pasta Skillet

Ingredients:
1 Tablespoon extra virgin olive oil
1 (13 oz) Kielbasa, sliced on a diagonal into coins (or sausage)
1 red bell pepper, diced
1/2 onion, diced
1 Tbs. minced garlic
1 cup halved grape or cherry tomatoes
2 cups chicken broth
1 cup milk
½ pound pasta
⅛ teaspoon cayenne pepper (optional)
1 teaspoon freshly ground black pepper
4 ounces Parmesan cheese, grated

Directions:
Heat a large skillet over high heat. Once hot, add the olive oil and swirl to coat the pan.
Add the kielbasa (if using sausage no need for oil), red pepper, and onion and saute until browned. Add garlic and tomatoes and sauté 30 seconds.
Add the chicken broth, milk, pasta, cayenne pepper (if using), and black pepper. Stir well and bring to a boil.
Cover, reduce to low, and simmer 12-15 minutes or until pasta is al dente. Remove cover and turn off heat.

Stir in the grated Parmesan cheese and serve hot.

**yummy variation: use sausage and zucchini, add some cornstarch to thicken

Egg, sausage & hash brown classic breakfast

Ingredients:
Eggs
Hash browns
lil smokies
seasonings

Directions:
cook up some eggs, hash browns, and lil smokies (or other protein such as sausage or bacon) to your liking. Serve with orange juice and a slice of toast.

Zupa Tuscana

Ingredients:
1 lb. Italian sausage, cooked and drained
8 cups chicken broth
6 red potatoes, cut into bite size pieces
1 bunch fresh spinach (or kale), cut into small strips
2 tsp. basil
salt and pepper to taste
1/2 cup whipping cream
Parmesan cheese 

Directions:
Boil potatoes in chicken broth. Add kale about 10 min. after the potatoes (if using spinach, wait until closer to the end). Add basil and salt and pepper. Once potatoes are cooked through, add cream, cooked sausage and spinach (if using spinach). Heat through. Do not allow cream to boil. Sprinkle Parmesan cheese on top just before serving.

Homemade Spaghetti Sauce


Ingredients:
1 can whole tomatoes
½ onion, chunked
5 garlic cloves
¼ cup ketchup
1-2 chicken bouillon cubes
Oregano
Basil
Parsley
Italian Seasoning
1/8 tsp. Thyme
1 lb. Italian sausage

Directions:
In blender put whole tomatoes, onion and garlic cloves. Blend until smooth. Pour contents of blender into a pot along with ketchup, chicken bouillon and seasonings (oregano, basil, parsley, Italian Seasoning and thyme). Heat on high until boiling, then turn heat to low and let simmer for 1-2 hours. Meanwhile, brown Italian Sausage in frying pan and add to sauce. Serve over noodles with green beans, salad and bread. 

Sausage, Hash brown Egg Casserole




Ingredients:
6 eggs
1-2 cups grated cheese
1 ½ cups milk
Bacon, sausage or ham (cooked in frying pan) and cut into bite size pieces
Salt and pepper to taste
Ranch seasoning to taste
1 bag frozen shredded hash browns

Directions:
Make the night before and let sit in fridge over night (if using frozen hash browns). If making the morning of, cook the hash browns slightly before putting in casserole dish.

Spray 9 by 13 pan. In a large bowl mix eggs, most of cheese, cooked meat, milk and salt and pepper and ranch. Stir in hash browns.  Spread into 9 by 13. 

Bake 45 min at 375

The last five minutes of cooking add extra cheese on top, bake until melted.

Spaghetti



Ingredients:
Spaghetti noodles
1 pound hamburger or sausage
spaghetti sauce (26 oz jar--our favorite is Great Value Brand)
1/4 cup ketchup

Directions: 
Boil noodles. Meanwhile, season and brown hamburger or sausage in frying pan. Drain fat. Once cooked, add spaghetti sauce and ketchup. Serve over noodles and top with parmesan cheese. Goes great with bread, green beans or salad.

Jambalaya




Ingredients:
1½ cups rice (3 scoops rice and fill water to the 3 line)
1 pound chicken
1 pound sausage
1 tsp. garlic, minced
1 pkg. Lipton onion soup mix
½ cup salsa
1 cup frozen corn


Directions:
Cook rice.
Cut up chicken into bite size pieces and fry with sausage. Season with salt, pepper, garlic (minced or powder). Add Lipton onion soup mix, salsa and corn. Add rice to frying pan and fry for 5 min.  
Other add ins include: chopped zucchini, peas, and shrimp

Italian Sausage Soup



Ingredients:
½ pound sausage
2 green onions
3 cups water
3 zucchini (chopped)
1 can stewed tomatoes
2 chicken bouillon cubes
6 oz of noodles
2 tsp. basil
Oregano sprinkle
1/8 tsp. thyme
Italian seasoning (sprinkle)

Directions:
Cut up onion and brown sausage and onion. Season with salt, pepper, garlic, and onion. Pour onion and sausage into a pot along with water, chopped zucchini, stewed tomatoes, chicken bouillon cubes and noodles. To the soup add basil, thyme and Italian Seasoning. And more salt, garlic, and onion to the soup. Boil for 7 min. (until the noodles are cooked).
