Best Banana Bread

Ingredients:
1/2 cup (1 stick) butter, softened
1/2 cup brown sugar
1/2 cup sugar
2 eggs
2 tsp. vanilla
3 ripe bananas (approx. 1 cup)
1/2 cup sour cream

1 1/2 cups flour (may sub 1/2 cup for blended oats)
1 tsp. baking soda
2 1/2 tsp. baking powder
3/4 tsp salt

Directions:
Preheat oven to 350 degrees. Grease bread pan(s) or use parchment paper for easy removal. 

Mash bananas, set aside. In a large bowl or stand mixer, beat the butter, sugar, eggs, vanilla, bananas and sour cream.

In a medium sized bowl mix together dry ingredients - flour, baking soda, baking powder and salt. 

Stir the dry ingredients into the wet ingredients (banana mixture). Pour batter into bread pans. 

Bake at 350 degrees. Small pans approx. 30 mins and regular pans approx. 45-65 min. Test with a toothpick - doughy bread is no good. (This recipe yields one regular size loaf and one small loaf.)

For an extra delicious variation, once bread is completely cooled, melt some butter on a plate and pour some sugar on another plate. Dip one side of the bread in the melted butter, then the sugar. Repeat until all sides are coated.

Zucchini Bread

Ingredients:
3 eggs
1 3/4 cup sugar
1 cup oil

2 cups flour
1/4 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla

2 cups shredded raw zucchini (use a food processor)

Directions:
Beat eggs, sugar, and oil together
Add flour, baking powder, baking soda, cinnamon, salt and vanilla (mix by hand)
Add zucchini (beat mixture)
Bake 50-60 min. at 350 degrees
Makes 2 loaves

*muffin size approx 20 min. to bake
*mini loaves approx 33 min. to bake
*mini muffins approx 12 min. to bake

Naan Bread


Ingredients:
2 tsp. yeast
1 tsp. sugar
1/2 cup water
2.5-3 cups flour
1/2 tsp. salt
1/4 cup vegetable oil
1/3 cup plain greek yogurt
1 egg


Directions:
STEP 1: In a small bowl, combine the yeast, sugar and water. Stir to dissolve then let sit for a few minutes or until it is frothy on top. At that point, stir in the oil, yogurt and egg until evenly combined.

STEP 2: In a medium sized bowl, combine 1 cup of the flour with the salt. Next, add the bowl of wet ingredients to the flour/salt mixture and stir until well combined. Continue adding flour a half cup at a time until you can no longer stir it with a spoon (about 1 to 1.5 cups later).
STEP 3: At that point, turn the ball of dough out onto a well floured counter top. Knead the ball of dough for about 3 minutes, adding flour as necessary to keep the dough from sticking. I ended up using about 3 cups of flour total. The dough should be smooth and very soft but not sticky.
STEP 4: Loosely cover the dough and let it rise until double in size (about 45 minutes). After it rises, gently flatten the dough and cut it into 8 equal pieces. Shape each piece into a small ball by stretching the dough back under itself until the top is smooth and round. 
Step 5: Heat a large, heavy bottomed skillet over medium heat and spray lightly with non-stick spray. Working with one ball at a time, roll it out until it is about 1/4 inch thick or approximately 6 inches in diameter. Place the rolled out dough onto the hot skillet and cook until the under side is golden brown and large bubbles have formed on the surface (see photos below). Flip the dough and cook the other side until golden brown as well. Serve plain or brushed with melted butter and sprinkled with herbs!
TIPS: For the most bubbles, don't roll out the ball of dough until just before it is ready to be placed in the skillet. I experimented with different skillet temperatures and found that a medium heat produces the most bubbles in the dough and does not burn the surface.




Prep time: 15 min. Cook time: 25 min. Rise Time: 45 min. Total: 1.5 hrs.

Pizza Dough


Ingredients:
 cup warm water
¾  Tbs yeast

 Tbs sugar
¾ tsp salt
3 cups flour

Directions:
Mix the warm water and yeast until dissolved. In a separate bowl mix sugar, salt and flour. Add yeast mixture slowly while stirring. Knead on floured surface. Knead until dough is smooth and elastic. Return to bowl and moisten all surfaces with olive oil. Cover bowl with a cloth. Let dough rise until double in size, then pound down. Let dough rise again, then shape into a circle ready for pizza toppings.

After pizza is assembled Bake at 450 degrees for 8-10 minutes.

Ingredients:
Artesian bread from the bakery
turkey sliced from the deli
lettuce
tomato
bacon slices, cooked
avocado, sliced

Directions:
Layer ingredients inside two pieces of Artesian bread. Toasting bread is optional. Serve with chips, curly fries or soup.
