Ranch Baked Chicken



Ingredients:
3-4 chicken breasts
1 Tbs. ranch powder
1 tsp. garlic salt
½ cube butter, melted
1 tsp. coarse pepper
Italian bread crumbs

Directions:
Preheat oven 350 degrees,
Mix melted butter with ranch packet, coarse pepper and garlic salt. Dip chicken in. And place in lined baking dish. Sprinkle Italian bread crumbs over top. Cook chicken 20-30 min (I usually check with a knife to make sure it is done)

Ideas: Serve with noodles and sauce & a veggie OR liption onion potatoes and salad OR baked potato and zucchini 

Ham and Chicken Lasagna



Ingredients:
¼ cup butter
12 fresh mushrooms, sliced
1 medium onion, chopped
1 clove garlic, minced
½ cup flour
1 2/3 cup milk
3 cups chicken broth
1 (16 oz.) package broccoli florets, thawed and drained
2/3 cup shredded Parmesan cheese
½ tsp. salt
½ tsp. pepper
12 lasagna noodles, cooked and drained
2 cups cubed ham (sandwich meat)
2 cups cubed, chicken
2 cups shredded Swiss cheese (can use mozzarella)
½ 9oz bag fresh spinach, cut into small pieces

Directions:
Preheat oven to 350 degrees.
Heat butter in a skillet over medium heat. Stir in mushrooms, onion and garlic. Cook until soft and tender. Sprinkle flour over vegetables, and stir to coat. Stir in milk and chicken broth. Cook until sauce thickens (may need to add cornstarch). Stir in broccoli, Parmesan, salt and pepper. Cook until Parmesan is melted.
Layer 9 by 13 with ¼ sauce, ¼ noodles, ¼ ham, ¼ chicken, ¼ spinach, and ¼ Swiss. Repeat layers 3 times.
Top with bread crumbs (made of 4 pieces crumbled bread, garlic powder, onion powder, salt and pepper)
Cook for 35-40 min (cover with tin foil halfway through)

Stuffed Hamburgers


Hamburger patties
Soften 1 lb hamburger (use lower fat if possible)
Mix beef with 2 eggs
1 cup dried bread crumbs
½ cup milk
2 tsp. salt
1 tsp. pepper
Garlic (sprinkle)
Ranch Seasoning

Stuffing
Bread crumbs (nickel size)
Poultry seasoning
Ranch Seasoning
Salt
Pepper
Water (just enough to make it stick together)

Sauce
1 can cream of chicken
¼ cup water

Directions
Put stuffing in between two fairly thin hamburger patties and pinch edges closed. Place in a 9x13 and drizzle sauce on top. Makes about 4-5. Bake at 350 for 45 minutes.
Goes well with with mashed potatoes, lipton onion, or ranch potatoes 

Chicken Divan


Ingredients:
2 chicken breasts
2 cup broccoli
2 cans cream of chicken soup
½ cup mayonnaise
½ tsp. lemon juice
1 cup bread crumbs
1 Tbs. butter

Directions:
Cook chicken and cut into pieces. Cook broccoli (don't overcook or it will turn brown when baked). Mix cream of chicken, mayonnaise, and lemon juice. In a frying pan melt butter and add bread crumbs. Cook until golden brown. In a 9x13 layer broccoli on bottom, then chicken. Pour soup mixture over top. Top with bread crumbs. Bake at 350 degrees for 30 minutes. Serve over rice.
