Cilantro, Lime Corn Salad

Ingredients:
3 cups corn (one 16 oz bag frozen sweet white corn, thawed)
2 avocados, cut into 1/2 inch cubes
1 large tomato, chopped (can substitute cherry tomatoes, halved)

Dressing:
2 1/2 Tbs. olive oil
1 tsp. grated lime zest
1 1/2 Tbs. fresh lime juice
2 Tbs chopped cilantro
1/2 tsp. salt

Directions:

Combine the corn, avocado, and tomatoes in a large bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix.
