Cheesy Minestrone Soup


Ingredients:
4 cups water
1 qt. tomato juice
1/8 tsp. thyme
½ tsp. oregano
1/4 tsp. basil
2 tsp. chicken bullion
2 bay leafs 


5 carrots, sliced
4 celery stalks, diced


½  onion, diced
Mushrooms, sliced (opt.)
1 Tbs. oil

2lb ground turkey
Ranch pwd
1/4 t. pepper
1 T garlic

1/3 cabbage, shredded
5 red potatoes, cubed

1 small pkg. Velveeta cheese (the kind in the box)

Directions:
In a large pot add liquids and seasonings. Add carrots and celery. Meanwhile, in a frying pan sautee onion and mushroom in oil. Add turkey salt and pepper and garlic and cook. Once carrots and celery are getting soft, add cabbage and potato to soup. Add meat once done.  Once all vegetables are tender add cheese; heat until melted.
